I couldn’t resist 😍😋 If you are looking or a quick, Tasty treat them look no further 😍 These vegan chocolate cupcakes were so insane I had to share the recipe 🤤 made by @emilysarahunter and I helped eat them 🤤😋 Ingredients;
150g dairy free spread (We used Olive spread)
300ml dairy-free milk ( We used almond)
300g self-raising flour
200g golden caster sugar
4 tbsp coco powder
1 tsp bicarbonate of soda
1/2 tsp vanilla extract .
75g vegan spread (we used olive)
200g powdered icing sugar
4tbsp unsweetened coco powered
2 tbsp water or dairy free milk
Whisk the vegan spread and the sugar until it’s creamy .
Then add your chosen milk and blend that together .
Mix all of the flour, bicarbonate of soda and coco powder in a bowl and Blend until there are no lumps .
Add the dry ingredients into the mixture and stir together - may seem dry at first but will loosen .
Spoon the batter into cases
Bake in over for 25 mins at 180C
Add coco Powder and sugar into food processor, add the vegan butter, blend mixture and gradually add chosen milk (or water) until your icing is the consistent you want
Then decorate your cupcakes 🧁
BOOM there you go, a quick and easy recipe which tastes amazing AND ALL VEGAN 😁
