Even if we can't go out for pizza we can still have pizza 🍕 I know flour and yeast have been in short supply but if you've managed to find some then what are you waiting for? Pizza dough is easier to make than you think and you're allowed to use a rolling pin if you're pizza throwing skills aren't the best! This isn't the time for everyone to be choosing their favourite toppings so I did a bit of kitchen foraging and found an aubergine, some red onions and a jar of black olives and added tofu ricotta left over from yesterday's lunch to one and an easy homemade cashew mozzarella to the other and drizzled liberally with olio piccante 🌶️🌱💕 . #veganpizza #vegancheese #pizza #italianveganfood #italianfood #vegan

𝗢𝗻𝗲 𝗶𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁 𝗹𝗲𝗻𝘁𝗶𝗹 𝘁𝗼𝗿𝘁𝗶𝗹𝗹𝗮𝘀 *Gluten-free*Vegan*Flour-free A few days ago I decided to make some kind of tortillas for lunch and remembered my good old red lentils wraps/tortillas recipe. We enjoyed them so much the next day I made even more. . Usually I tend to gravitate to quite complex recipes because that’s just the way I am. Most of the times I have at least 10 ingredients in my meals :D Well, this is not the case with this recipe (if you won’t count the spices as ingredients, they’re all optional 😉) . 𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀: Dry red lentils. (1 cup makes ~3 tortillas) . Optional: 1tbsp ground flax seeds . 𝗦𝗲𝗮𝘀𝗼𝗻𝗶𝗻𝗴𝘀 to choose from: Onion powder Garlic powder Salt (use black salt if you want eggy flavour) Chili powder Paprika powder Turmeric Black pepper Cumin powder . 𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀: Cover lentils with 2 cups of water and soak for 5-8 hours. Then drain and blend until smooth with a blender/ food processor/ hand blender together with flax seeds(if using) and your choice of seasonings. Add just enough water to make it into a smooth paste. It should be thicker than a traditional pancake batter. Heat a non-stick pan, add 3-4 tbsp of the mixture and spread out evenly into a circle. Cook for 1 min 30 sec on one side without flipping (this is important, otherwise it will break) and then 30sec on the other side. . How do you like your tortillas to be served? I prefer mine with hummus or soy cream, baby greens, avocado, tofu, sun dried tomatoes, peppers and cucumbers. . Feel free to experiment!
